Beat and Bake Sponge Cake

cake bakingThis recipe my mother has used for years and many relatives of mine. It seems to be pretty flop proof which is what every baker wants!

Ingredients:

Beat the following ingredients together until light and fluffy.

125g margerine or butter

1cup sugar

2 eggs

Then add:

1 1/2 cups of flour

2 tsp baking powder

1 tsp vanilla essence

Pinch of salt

1/2 cup milk (leave out when making cup cakes)

Place in greased baking trays and bake at 180 degrees celcius for 30 minutes. If using a loaf tin bake for approximately 45min and cupcakes for about 12-15 min.

    This definitely brings back memories, my mum had a flop proof beat ‘n bake cake which she turned into so many different types of cakes – coconut, passion fruit.
    Was absolutely yummy!!!
