I also like the icing recipe, not only because it complements the cake but it is the correct quantity to cover the cake. There’s nothing worse than realising you’ve made too little icing!

Chocolate Buttermilk Cake

Ingredients:

500ml flour

500ml sugar

Pinch of Salt

5ml Bicarbonate of Soda

125g Butter/marg

250ml water

125ml oil

125ml cocoa powder

2 extra large eggs

125ml buttermilk or plain yoghurt

Method:

Heat butter, water, oil, and cocoa powder in a small saucepan and bring to the boil. Remove from heat and cool.

Sift flour, sugar, salt, bicarbonate of soda into a large bowl.

Pour cocoa mixture into the flour and mix well. (I use a spoon)

Whisk eggs and buttermilk together and add to the cake mixture.

Pour into greased ringpan – Bake at 180˚c. The recipe suggests for 30 min but I have to bake mine for an hour before it’s done

Remove from the oven and cool in the pan for 5 minutes before turning it out onto a wire rack.

Icing:

60g butter/marg

30ml cocoa powder

45ml buttermilk or plain yoghurt

5ml vanilla essence

375ml icing sugar

Melt Marg in microwave for 1 minute- stir in other ingredients.

My sister passed this recipe on to me after receiving it from some American guy. This is almost as easy as buying and making the snowflake ready mix stuff and seriously gooood!

Very Yummy Brownies

Ingredients:

1 ½ cups flour

½ tsp salt

1 cup soft margarine

2 cups sugar

4 beaten eggs

2 tsp vanilla

½ cup cocoa

1 crushed milk choc (optional)

Method:

Mix together with an electric beater.

Bake at 180°c for 20-25 min in a baking tray. (Not a cookie sheet)

I usually cut them when they are cool so that you get straight edges but I understand if you can’t wait that long because they’re just too delicious!

My husband I had so much fun with his cake. We had the typical surgeon-nurse situation where I would do the preparation for the op with all the implements and equipment, and he would perform the operation- with my assistance of course. I thought a bus looks sort of like a one, plus he loves “the wheels on the bus”.

We had fun, we thought it looked cool and it tasted nice too.

What you will need:

A sponge cake recipe. (I doubled the Beat and Bake recipe which has been in our family for ages-apparently flop proof. This made two cake loaves)

2 cup cakes halved with the top section cut off (for the wheels)

Liquorice twists that I cut in half (In SA you get the little packs- I bought 3)

Food colouring

Marshmallows

Sour wheels (Bought from Pick in Pay- it’s a real of flat candy that I used for around the wheels.)

Icing (Frosting)

We cut the one loaf to be smaller which went on top, the bottom layer forming the bonnet (hood). My husband used a electric carving knife to curve the bonnet (hood) and cut off the unwanted top section. It worked well. Then we iced it (frosting on) and decourated. Easy-peasy!

This one was seriously delicious and practical because you send the cake to school and then forget about it. No need to worry about the tray or your favourite cake tin. The trouble though is you have to aquire a beer box and if you’re from a family like mine where nobody drinks, it could be a task but the cake is well worth it.

8 large eggs

630g castor sugar

500ml boiling water

420g cake flour

30ml baking powder

Pinch of salt

Method:

Whisk eggs and sugar until light and fluffy. Blend in remaining ingredients mixing thoroughly. Pour batter into *prepared box and place in the oven for 35min at 180 degrees celcius. Cool and ice as desired.

For plain vanilla cake- 4 changes

I made these with my niece and nephew for easter once but they can be made as party treats or just for fun. They’re quick and easy and create little mess! It’s basically a “s’more” on a stick.

You will need:

A packet of marshmallows

A packet of marie biscuits

A box of smarties or jellytots

1/4 cup icing sugar

Water

A slab of chocolate (optional- but yummy)

kebab sticks

Place a single marshmallow in the centre of a marie biscuit and put it in the microwave until the marshmallow begins to balloon. Remove from microwave and press the kebab stick into the marshmallow (and the optional chocolate piece) and put another marie on top to make a marshmallow/ kebab sandwich.

Next is decorating the pinwheel: I cut slices of marshmallow with a scissors to form petals and used smarites for the middle of the flower. I used the icing sugar mixed with a little water to become the consistency of toothpaste to stick these decorations onto the maries. For a little more colour, add food colouring to the icing.
